About Parrilla Chef Diego Escobar

Diego brings the soul of South American fire cooking, shapred by his roots and refined through years of experience across Latin America and Europe. Trained in Gastronomy and Haute Cuisine, he has built his career around parrilla and asador traditions, from leading grills in Asunción to showcasing authentic open-fire cooking at El Asador in Prague. With experience as a head chef, grill chef, and culinary instructor, Diego combines tradition with a modern, global perspective on food. His expertise in live-fire cooking and large scale parrillada service makes him a rare talent. At Southbound, Diego brings authenticity, energy, and excellence to every service, sharing the art of parrilla with every masterclass.
